This Gorgeous Hammer beaten ( Tsuchime ) Santoku has an extremely sharp Aogami-2 ( blue steel2# )cutting core with a softer layer of SUS410 steel outer layer.
With an Hrc of 62 this knife will glide through pretty much anything! But not bone of frozen food!!
The handle has a half tang set in a laminated pakka wood handle.
Do not put in dishwasher and only use a wet stone for sharpening
